These are also the headlines that were in my mind when I set out to create my new line of NON-RAW, Righteous Cacao. How can I create a blend of coffee and chocolate so that we get that high antioxidant combination of coffee and chocolate in a bite-size, daily jolt but without the added sugars and unhealthy additives?

My research showed me that Coffee beans also contain polyphenols, a type of antioxidant.

Antioxidants can help rid the body of free radicals, a type of waste product that the body naturally produces as a result of certain processes.

Free radicals are toxic and may cause inflammation. Scientists have found links between inflammation and various aspects of metabolic syndrome, including type 2 diabetes and obesity.

I created the most incredible combination of Organic coffee, Organic Puffed Quinoa and our Organic stone-ground cacao, all in one small bite. I wanted an ingredient with amazing health benefits to give it the crispy crunch and chose puffed quinoa as my added ingredient.

Then I had to figure out how to use whole dates as my only sweetener and that was the hardest part of the creative two-year journey!

 Using Melangeurs to grind the cacao and dates to create the most artisanal, smooth taste was exceedingly difficult because humidity can be the issue when using date sugars. We worked hard over a three-month period to figure it out (we were told it cannot be done) and we did it!!!!

I will introduce you to the most delicious combination of my favourite two loves: COFFEE AND CHOCOLATE! In a bite-size square that can be enjoyed daily using only the finest ingredients. Righteous Cacao
